WHAT IT IS:
It is a typical swiss dish from Valais made of melted cheese. Raclette is usually served with potatoes, pickles, pickled onions and dried meat. As for beverages, warm drinks and white wine are preferred.
Usually we heat half of the wheel of the cheese and scrape the melted part into the plate. In french, the word “racler” means scrape, this is where the name raclette comes from.
However, to make it easier to eat, there exists raclettières. It is a heating machine with small little pans. You can place your slice of cheese on the little pan and insert in in the raclettière to let the cheese melt and finally pour it onto your plate.
WHAT YOU NEED:
- Raclette machine
- Raclette cheese (200-250g/person)
- Potatoes (Amandine, Charlotte, Chérie, Pompadour). These varieties of potatoes are better for raclette since they stay more compact after being coked and have a thinner skin.
- Pickles, pickled onions.
- Dried meat (ham, salami, …)
- Wine.
- Good company!!!
